Antipasto ($7.99/pint)

Made from a recipe that has been passed down over generations, Laura and Robert Campo, Sr. perfected it when it fell into their hands. It soon became a family delicacy, as only two batches were made a year, and they were reserved for special occasions and holidays. As others began to try it, and as the grandchildren fell in love with it, Laura and Robert, Sr. taught their sons the timely and involved process. Packed with mushrooms, olives, cauliflower, pickles, onions, and more, and slowly cooked in a unique and flavorful sauce, your taste buds will find our Antipasto beyond compare.

Bella Campo Sauce ($5.00/16oz.)
If you love the taste and flavor of our bolognese sauce but don’t want the meat, try this delicious marinara sauce based on our original recipe. We simply substituted the meat with luscious chunks of tomato, giving you that full texture and Campo di Vino flavor. You won’t go wrong with this marinara!

Bolognese Sauce ($5.00/16oz.)
We searched long and hard before we found the perfect Bolognese recipe. Made with an exacting combination of ground pork and ground vegetables, and just the right mix of garden herbs and spices, you will find our sauce irresistible to the taste. As a matter of fact, we’ve heard that some people have made a meal out of the sauce alone…but please, we recommend you put it on our ravioli or your favorite pasta to fully enjoy its amazing flavor.
 
Chorizo ($5.99/lb)
This popular Spanish sausage is made with ground pork, salt, garlic, various spices and paprika stuffed in a medium casing. Our chorizo is made with a special Spanish paprika that gives it a very original, yet not an overpowering flavor. All of our chorizo dry for an optimum amount of time to ensure they have reached the peak of flavor when they are consumed. Chorizo is popular in many recipes, from stuffings to being served for breakfast with eggs, and is fantastic when cooked on the grill.  Also try our hotter, spicier version to really "kick it up!"
 
Luganiga ($5.99/lb)
This Northern Italian specialty is made with a combination of ground pork, salt, pepper, various spices, parmesan cheese and wine, and is stuffed into a smaller diameter natural casing. This specialty sausage can be cooked and used in a variety of recipes from soups to stews and is a great addition to any meal. Luganiga is also excellent when grilled and makes for a wonderful summertime barbeque.
 
Maple Breakfast Sausage ($5.99/lb)

We had to do it…even with our ethnic heritage we are still, after all, Vermonters! We took the freshest pork we could find, combined it with the proper seasonings and spices, and then added real Vermont maple syrup to make the best breakfast sausage you will find in central Vermont. Young or old, big appetite or small, once you have a taste of this sausage it will become a must for every breakfast!
 
Meat Ravioli ($8.00/three dozen)
Having developed a knack for pasta over the years, we've finally perfected our ravioli recipe. With a pasta shell that couldn’t feel lighter to the touch, and a filling comprised of meat, herbs, and spices, these ravioli leave layers of flavor unfolding in your mouth with every bite. It is, no doubt, a taste you will remember.

Lobster Ravioli ($14.00/two dozen)
Adapted from an old Campo Family recipe for "Lazy Lobster," these hand stuffed ravioli have become one of our most popular items.  If you are looking for a fresh dish with a savory new taste, but still want the familiar homemade flavors you have come to love, this is a treat you won't want to miss.  Whether you are relaxing with family, entertaining friends, or hosting a dinner party, our Lobster Ravioli are sure to impress.
 
Three Cheese & Spinach Ravioli ($8.00/three dozen)
You asked for them and here they are! We took fresh ricotta, mozzarella, and parmesan cheese and combined it with spinach, cream, nutmeg and a hint of garlic, and stuffed it into our homemade pasta. It’s a pleasing alternative to our meat ravioli and a hit among vegetarians—especially when paired with our flavorful marinara sauce. (Note: Three Cheese Ravioli are also available without the spinach)
 
Salamite ($5.99/lb)
Salamite is a tasty Italian sausage made with ground pork, salt, pepper, various spices, garlic powder and wine, and stuffed in a medium casing. Salamites are often boiled, sliced and served cold with crackers and cheese, or served hot with a meal. This sausage is great in tomato-based sauces and of course is great on the grill as well. The flavor of our Salamites will keep you coming back for more and more.
 
Pasta Frolla ($7.99/each)
The classic Italian shortbread is prepared by hand with flour, butter, sugar and a hint of almond flavoring. Our pasta frollas are made with love like Nonni used to make and are available with strawberry, raspberry or apricot toppings. Only available during the Holidays or Easter but if you “just have to have it” call us up and we will bake it for you fresh that day!  Pasta Frolla are also now available with Nutella topping - simply to die for!
 
Prepared Ham ($5.99/lb)
Our prepared hams are also another Rubalcaba family tradition. First and most importantly we only use the best cured hams selected personally by Gary. The hams are then wrapped in a combination of crushed pineapples, brown sugar and other special spices that make for a mouth watering and delicious meal for Easter or any special occasion. Order these early or you will be disappointed!
 
Prepared Roasts - Beef or Pork ($4.99/lb)
This has been a Rubalcaba family recipe since the mid 1970’s when Gary’s dad sought out the recipe from the original creator and worked with and taught Gary how to perfect it. The roasts are made with quality choice boneless cuts of beef or pork. The roasts are specially seasoned and then wrapped in just the correct combination of onions and other special ingredients which are all held together with a string netting for roasting in the oven. These roasts have been a favorite to many families in Barre and the surrounding communities. They are available in beef, pork, or our special “French Cut,” which is a beef and pork combination. Please note that we will not make any roast less than 5 lbs to insure proper cooking for the most tenderness.
 
Vaniglia or Zampet ($5.99/lb)

These sausages share some similarities but are uniquely different in taste. Both are made with pork and special spices and seasonings but are stuffed in a larger casing giving you a sausage with a 2 ½” to 3” diameter. They are usually cooked, sliced and served warm at the dinner table but are also great after they have been cooked and cooled in the refrigerator overnight. The major difference in the two is the vanilla flavoring added to the mix, hence the name “Vaniglia.” So, if you like this larger sausage with the vanilla flavoring, order the Vaniglia; if you prefer it without the vanilla flavoring, please order the Zampet.
